Taurine, also known as 2-aminoethanesulfonic acid, is among the most crucial amino acids in the body. The liver can synthesize small amounts of taurine from cysteine and methionine (4). It acts as an organic osmolyte and plays a role in regulating cell volumes. Additionally, taurine is involved in the development of the central nervous system and provides cell protection, particularly for the retina of the eye.

The majority of taurine is obtained through the diet. Dairy products contain small amounts of taurine, with higher levels found in shellfish, dark meat of chicken and turkey, and turkey bologna.
